This Is The Best Carrot Cake I Have Ever Eaten


I have baked all my life, and while I usually do not create the recipes, I am pretty good at following them. That is the difference with cooking and baking. Cooking can be totally inspired. A bit of this, a little of that. Creativity is encouraged. Baking is such a science. Tweaking the ingredients can lead to disaster.


That was a major source of frustration when I moved to Taos, New Mexico. We are at 7000 feet, and the altitude change from sea level has caused my baking successes turn to failures. Cakes and cookies do not bake evenly, collapse, and taste different. I have not been able to find the appropriate adjustments to make my favorite recipes work.  So I cannot explain the joy I felt when I discovered the Mountain Mama Cooks blog. The author has perfected the art of high altitude baking. Now, if you live at or near sea level, this may not mean much to you...but to me? Desserts are back!



I was scrolling through the site and stumbled upon this recipe for carrot cake. It looked so good that I made it that very day. Not only was it delicious, but it was also the best carrot cake I have ever eaten. (and I have eaten a LOT of carrot cake in my life. I made the cake again for a potluck dinner, and it was a hit. Many people came up to me and exclaimed: "This is the best carrot cake I have ever eaten!" The cake was so successful that I made it again for another potluck (I am invited to many potlucks!) and received the same reaction. So I have been making carrot cakes, (and cupcakes from the same recipe) for every function where I am asked to bring dessert, and I have received rave reviews every time.



This is carrot week at Food Network. I could not think of a more perfect recipe to share. And it is a bundt cake which is so much easier than a layer cake. How cool is that? I made very slight tweaks to the original. I replaced the called-for vegetable oil with olive oil because I like it better and ensured alum-free baking powder was used. Otherwise, totally the delicious original recipe. Thank you, Mountain Mama!



The Best Carrot Cake I Have Ever Eaten
from Mountain Mama Cooks
(cake serves 12 or makes 20 cupcakes)

Note, the Mountain Mama blog suggested adding nuts to only half the cake top. That way you satisfy the nut lovers and the nut haters. Feel free to add nuts to the top of the entire cake if desired.

2 cups unbleached flour
2 teaspoons cinnamon
1/2 teaspoon alum-free baking powder
scant 1 teaspoon baking soda*
1/2 teaspoon sea salt
4 large eggs, room temperature
1 1/4 cups granulated sugar
1/2 cup extra virgin olive oil
1 teaspoon pure vanilla extract
zest of 1 orange
1/4 cup creme fraiche (or sour cream)
4 cups shredded carrots
3/4 cup shredded unsweetened coconut
1 batch Cream Cheese Frosting

Preheat oven to 350 degrees. Spray a 10-cup bundt cake pan with cooking spray. Set aside.

In a small bowl, whisk together the flour, cinnamon, baking powder, baking soda and sea salt. Set aside.

In the bowl of a stand mixer, beat together on medium speed the eggs and sugar until pale yellow, light and fluffy. (about 3 minutes). Add the olive oil, vanilla extract, and orange zest. Beat until well mixed. Add the flour mixture in 3 parts until just incorporated. Stir in the creme fraiche, carrots and coconut.

Spoon batter evenly into prepared bundt pan. Bake in preheated oven for 50-55 minutes until cake is golden brown and a cake tester inserted into the center of cake comes out cleanly with no raw batter. Remove from oven and let cool on a baking sheet for 10 minutes, then turn out onto a cake plate and let cool completely.  When completely cooled, frost with the cream cheese frosting and top with nuts if desired.

Cream Cheese Frosting
8 tablespoons best quality unsalted butter, room temperature
8 oz cream cheese, room temperature
1 1/2 cups powdered sugar
pinch sea salt
1/2 teaspoon pure vanilla extract
1/2 cup chopped walnuts, optional

Add the softened butter and cream cheese to the bowl of a stand mixer. Beat at medium-high speed until combined and light and fluffy. Add powdered sugar, salt and vanilla extract. Beat for another minute or until incorporated.

This recipe has been creating for baking at altitudes around 7000 feet. The Mountain Mama site suggests increasing the sugar to 1 1/2 cups and increasing he baking soda to 1/2 teaspoon if baking at sea level.

*Scant means lacking a small part of the whole; not quite up to full measure. In other words, 1 scant teaspoon means not quite a whole teaspoon but a little less (from Whats Cooking America)

Chicken & Carrot Saute With Coconut Basil-Sauce


A good friend was in the hospital last week for an operation. When she was released to come home, I thought the best gift would be to stop by with a homemade dinner for her and her husband. If I were sick, that would be so much better than flowers. I made a batch of my Roasted Carrot, Shallot & Coconut Soup, bought some dinner rolls and, to keep the coconut theme going, prepared this chicken & carrot saute with all the toppings. Her husband just needed to whip up some brown or white rice and dinner was served.



I love how easy it is to make this delicious recipe...just saute the carrots, vegetables and chicken and then create the lovely sauce. Coconut milk, coconut cream, soy sauce and vinegar are cooked down to a thick reduction and then kicked up a bit with a handful of fresh basil. I serve this dish over white or brown rice and top everything with additional basil, cilantro leaves, chopped green onions and a squeeze of lime. It's like sunshine on a cold fall day. (ok, I know that was incredibly corny, but true!)



Chicken & Carrot Saute With Coconut-Basil Sauce
(serves 6)

3 lbs skinless, boneless chicken breasts cut into bite-sized pieces (about 1 1/2 inches in diameter)
1/4 cup extra-virgin olive oil, plus 2 tablespoons
4 large carrots, sliced in 1/4 inch medallions
1 small white onion, chopped
1 shallot, chopped
2 tablespoons fresh ginger, minced
2 garlic cloves, minced
2 jalapeno peppers, seeded, deveined and cut into thin slices
3/4 cup unsweetened coconut milk (from the dairy case)
1/4 cup coconut cream
1/4 cup soy sauce
3 tablespoons sherry vinegar
1 cup fresh basil, chopped
1/4 cup fresh cilantro leaves
1/4 cup chopped green onions
1 lime
sea salt
freshly cracked black pepper

Heat a large skillet until hot. Add 1/4 cup olive oil and the carrots, onion, shallot, ginger and jalapeno peppers. Saute, frequently stirring,  for 3-4 minutes or until the vegetables are tender, and the onions begin to caramelize. Remove the veggies using a slotted spoon to keep oil in pan and place in a rimmed pie plate.

Add 1/3 of the chicken to the hot pan. Cook, frequently stirring, until just cooked through and beginning to caramelize. Remove from pan using the slotted spoon and add to pie plate. Add the next 1/3rd of chicken and repeat the process. Finish with the last of the chicken.

Add to the skillet the additional 2 tablespoons olive oil, coconut milk, coconut cream, soy sauce and vinegar. Cook over medium-high heat until reduced by a third. (about 5-7 minutes). Stir in the chicken and vegetables and simmer until hot. Stir in 3/4 cup basil. Taste and add additional salt and pepper if needed.

Serve over white or brown rice and top with the remaining basil, cilantro, green onions and a squeeze of fresh lime juice.

Roasted Carrot, Onion & Garlic Mash



I first saw a version of roasted carrot mash 15 years ago in Food & Wine Magazine and have been tweaking the recipe ever since. I have added onions and garlic to the roasting pan for their sweet, smokey flavour and substituted maple syrup for the honey originally called. for. A healthy splash of extra virgin olive oil finishes the dish. When in season, I often add handfulls of fresh herbs to the carrots.  Try the mash as a side dish for Easter dinner, or pair with roasted chicken, fish, roasts or lamb. Perfect with stews. You will find many options for this easy and versatile way to replace potatoes in this warming, comfort food dish.

Roasted Carrot, Onion & Garlic Mash
(serves 6)
This recipe will make more roasted garlic than you will need. Use the rest in sauces, soups or just spread on toasted french bread drizzled with extra virgin olive oil.

1 head garlic
extra virgin olive oil
3 lbs carrots, cut into large pieces
1 large white onion, cut into quarters
1/4 cup vegetable broth
1 tablespoon maple syrup
sea salt
freshly cracked black pepper

Preheat oven to 425 degrees. Line a large rimmed baking sheet with parchment.

Cut 1/4 inch off the top of the garlic bulb. Place bulb on top of a piece of foil large enough to wrap garlic. Drizzle 1 tablespoon over the garlic and sprinkle with sea salt. Wrap the foil tightly to form a seal and place on prepared baking sheet. Scatter the carrots around the foil package and drizzle with 1-2 tablespoons of oil.  Using your hands, roll the carrots in the oil until coated. Sprinkle with sea salt and pepper. Place in preheated oven at roast for 30 minutes. Remove from oven add the onions, stir to combine, and roast an additional 20-30 minutes or until carrots and onion are very tender. Remove from oven.

In the bowl of a food processor, add the carrots and onion, including any oil from the pan.. Squeeze 2 cloves of roasted garlic into the carrots. Add the broth, maple syrup and pinch each of salt & pepper. Pulse until smooth with a bit of texture. Add a bit more olive oil if desired. Taste and adjust seasonings.

Serve immediately with a drizzle of oil over the top.

Carrots & Avocado with Cumin

Carrots and avocado are a wonderful combination as this dish proves. I think I will add the recipe to my Thanksgiving menu. The carrots are crisp-tender, the avocado smooth and creamy, the lemon-olive oil vinaigrette light with a touch of spice; perfect to balance out the richness from the rest of the meal.

Best of all, in my opinion, this easy make-ahead dish should be served at room temperature freeing up your stove, oven and refrigerator for the rest of the traditional feast. Well, actually, best of all is the carrots are absolutely delicious.  Enjoy!



Carrots & Avocado with Cumin
(8 servings)

2 lbs carrots
3 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
1 large garlic clove, minced
2 tablespoons ground cumin
1 teaspoon crushed red pepper flakes
1 ripe large avocado, cut into 1 inch cubes
2 tablespoons cilantro, chopped
sea salt
black pepper

Cut carrots into 3-inch long pieces, then cut into 1/2 pieces in diameter. 

Add carrots and 1/2 cup water to medium sized saucepan. Add 1 teaspoon sea salt. Bring to a boil, reduce heat to medium-high and cover. Cook until carrots are crisp-tender (7-8 minutes). Pour into strainer to drain off all the liquid. Set aside.

Add lemon juice, olive oil, garlic, cumin and pepper flakes to a large bowl. Whisk together until combined. Stir in warm carrots ensuring they are well coated. Allow to come to room temperature. (can be made 1 hour ahead). 

When ready to serve, stir in avocado and cilantro. Season to taste and serve immediately.
