3 large carrots, well scrubbed
1 med white onion, diced
1 fresh poblano chile, seeded and minced
2 fresh jalapeño chiles, seeded and minced
1 canned chipotle chile, seeded and minced
1 tsp to 1 tbsp adobo sauce (from the canned chipotle)
1 clove garlic, minced
2 heirloom tomatoes, seeded and diced
juice 1/2 lime
